The flavour of free-range rabbit is both sweet and delicate; the traditional Ischia island “coniglio all’ischitana” is an authentic, popular dish of free-range rabbit stewed in white wine, cherry tomatoes, garlic and herbs.
Rabbits are fed on strictly natural produce without OGM’s and are also fed according to their phase of growth using a particular type of hay which contains little humidity and high in fibre and nutrients.
Rabbits are also bred in a free-range environment in open spaces for at least 3 months before consumption, therefore producing not only delicately flavoured but lean meat, ideal for a healthy diet.
The company produces rabbit meat according to strict guidelines guaranteeing quality control, with vetinary checks throughout each phase of growth, a process required by Italian law.
The farm is located in the town of Forio in an area called “Cannavale” at about 370 m above the sea level, and stretches for about 2 acres, partly wooded and partly cultivated with vines and vegetables and in part for animals breeding, including the cave’s rabbit.
The company is also equipped with a large and ancient cellar with local millstones.
